This plant is an underutilized great opportunity too! It is a large-sized perennial, which is a close relative of the sunflower. The plant is showy, and its big yellow flowers, which also looks good in a vase, come out late summer or in autumn! Fully winter-hardy, the tubers do not need to be picked up for the winter, they can be left in the ground very well! If the withered foliage is left in place, it can keep the soil underneath frost-free, so you can pick it up fresh almost any time in the winter. One stem yields about 2-3 kg of tubers and they can be used like the potatoes. The tuber has a typical taste - for us, it was just weird for the first time, now the whole family like it! Owing to its inulin content, the nutritional value is significant because diabetics can also eat it, a significant source of vitamins and minerals. Contrary to the potato, which is fully-chewed by the potato beetles by the middle of summer without spraying, no chemicals should be used to cultivate this plant. (We grow it in this way, taking the risk of losing half of the crop, but at least we eat completely chemical-free potatoes.) In addition, the Jerusalem artichoke is a very good substitute for potatoes, moreover we can use it for feeding the animals too! Not incidentally, it had the usual crop in the very dry year of 2011 too! Last but not least, we offer a version which has roundish tubers with less uneven surface, easier to clean!
